I saw that sRGB of canon DSLR linke 30d or 20d is not the standard
sRGB IEC61966-2.1 but is the Canon sRGB v1.31 (Canon).

Some companies have their own variant of sRGB. I know that Kodak does this as well. The color gamut is the same, but the gamma is 1.8 instead of the standard 2.2 of sRGB IEC61966-2.1. They believe it gives better shadow separation.

if I print on a lab that uses the sRGB standard I have to assign or
convert to the sRGB IEC61966-2.1 ? or leave the sRGB v1.31 (Canon)

another thing : since I'l going from a sRGB to another sRGB I need
to use only assign instead of convert , right ?

Do not assign the profile, convert it. If you assign it, you're giving any program that reads embedded profiles incorrect information. Any time you're going from a known color space to another, convert. You're not seeing any difference between the two sRGB profiles because in reality, there isn't much difference. If you want to see how things can get messed up by assign profile, open one of your sRGB images then assign ProPhoto RGB or Wide Gamut RGB and see how the colors change on screen.
