2. Only use Av as I tend to shoot with the lens wide open. Use M for external flash.

3. Partial metering with centre point AF.

I used DPP and normally use the default setting, only increasing or
decreasing the exposure by a little if required. In PS I add some
sharpening and currently use JBs Custom Smart Sharpen which I found
long ago on the web. With the 400D and an L lens, compared to the
350D, I find I can apply much more sharpening without getting halos
or artifacts.
