So I was wondering...

How exactly DOES one set the f stops on a dSLR?

I've only ever used P&S (A70 and S2 IS) and it's done with the D-pad.

Is it done via a menu screen or is there a ring or something to select on the lens?

I'm asking in reference to the 20D. (Don't tell me to RTFM, the camera arrives tomorrow )
