I use matrix metering combine with EV adjustment combined with the feedback from the histogram to get the exposure right for landscape type shots.

If you want to make absolutely sure before the shot that you get the exposure right spot meter off the highlights, shadow and the most important areas and set exposure manually to stay within the about 9 stop usable dynamic range of the D200 and/or to achieve the exposure you want. Thats the method I used shooting slides (the dynamic range was only about 5 stops).
