I wasn't aware that de-fishing worked in such a manner.

'De-Fishing', or curvature modification in digital post-processing,
does result in some loss in resolution, since areas of the image
are re-sampled. For images where straight lines are important, a
rectillinear lens is going to produce the best image quality.
