Raw to 16-bit for editing - Why do people do this?

I have been taking RAW images which I want to retouch in Photoshop CS2.

I have noticed people in these forums say to edit in 16-bit.

Could someone explain the workflow, eg open RAW image, convert to 16-bit (why do this), etc, and what is the benefit. I may need to change my techniques.

Your help with this will be much appreciated.
