The 8 megapixel
Pro1 can produce a 3264 x 2448 pixel image file from which a 10" x
8" image with 300 dpi can be printed.

So perhaps the use of 180dpi by Canon (and others?) in the EXIF data, arbitrary as it is, is mostly a marketing thing? If they tag all the images as 180 DPI (or PPI to be more correct), then they can claim that a camera with a certain number of MP's has enough resolution to print 8x10's... which it does... it's just not quite up to the standard most commonly used in the graphic design and print world. Heck... tag them as 72 ppi and you could say that a 1MP camera can print 8x10's
