Does your canon flash cord carry the dedication signals? I'm betting it doesn't, because normally in "M" mode a canon flash will fire at full power (from what I've heard). Try running the test with the 380EX in the hotshoe, and with one of the non-canon's in the hotshoe.

Canon's out, if my suspicion is correct, is that this is "not a professional camera, so we don't guarantee results with a flash cord." Silly, I know.
