Here in Taiwan traditional bread doesn't look like what has been made in Europe for centuries. The recipe is completely different and it's always steamed. The main advantage over "western" bread is that the preparation is quicker, so steamed bread stores can easily cook it non stop for the whole day. Not an easy job to do on summer, though.
