All over the world there are different food cultures. Submit a photo of any type of food with a certain tradition behind or common staples from any specific country which must be mentioned. Fruits are allowed here but you must state the native country of the fruit. It does not have to be fancy food. For example, you can show the simple food people in Africa can afford.

Traditional Bacalao

Photo of a traditional Christmas and New Year's Eve dish called Bacalao. This dish is very popular in countries such as Mexico, Spain, Portugal and many other Spanish speaking countries. It is served with french bread and rapini. Bacalao is salted Cod Fish mixed with tomatoes, onions, potatoes, olives and capers. Preparation requires rinsing out the salt the day before cooking, precooking then separating the bones from the flesh. Next the final cooking takes place Christmas Eve or day or New Year's Eve. The best Bacalao comes from Cod Fish from Norway that includes the bones as they give better flavor than fillets of Cod Fish.
