Pressing the MENU button while in one of the manual record modes (P, S, A, M) displays the record menu over the live preview image. In the captures below a black background was used for clarity (normally you'd see the live view 'behind' the menus).

You have to select bracketing mode by pressing the drive button twice, once enabled the camera will shoot all three frames with one press of the shutter release.

Switching to the SET option on the mode dial (and in record mode) will display the setup menu, this allows you to change various other camera settings such as power save timeout, image display and file size / quality.
