Saturation adjustment allows you to control the strength of color in the final image. At the -4 setting you get quite a muted color response but this could be useful for post-processing, anything above +2 can lead to color channel clipping.
Color tone (hue) adjustment
Color tone subtly adjusts the hue of the image, a negative setting makes red tones appear more blue/purple, a positive setting makes them appear more yellowish. Each step equates to an approximate 4% hue shift, hence +4 = +16° hue shift.
