That's correct.. unless you change them yourself. By default DPP will apply the same transformations as the out of camera JPG would have had applied to them.

Depends on the wall they are going on, although I'm willing to bet the first will probably look 'the best' framed. Why not pick a frame, and get prints done of all 4. Prints are pretty cheap...
