From reading other posts, I guess the CF card is not changing for me because I don't close the card door (I leave it open to make sure I remember to add the card again).

I believe it only happens if the camera is "on" and "awake" when a card is missing. If you leave the camera off and take a card out and put it back in, the default should not change.
