My prefered software for HDRs now definitely is Photoshop. Take as many exposures as necessary, use PS function "Merge to HDR pro..." (you can directly import the RAW files), convert and save this...

Actually,  my favorite cameras for B&W shooting are Sigmas full color Foveons.  Files have lots of latitude for B&W conversions and incredible microcontrast which is even more important for B&Ws...

Well, actually the medium format professionals prefered sticking to pixel-counting and moved up to 80+ MP digibacks. I hardly think 2 MP would be too compelling for their uses... ;)
