Really the D7100 is good for everything I do in wildlife photography except birds in flight. If you're happy with the D300s at ISO 800 you'll be happy with the D7100 at ISO 1600.

Noisy is a judgement call. Sometimes yours is lacking. I can't say that mine is perfect. Here's a 100% crop. I don't think it is noisy in the least.

The eye is dead sharp at 100% and the OOF branches may appear to be noise. I brought up the exposure by 1/6 of a stop, which is a little less hot than I normally shoot.

Anyway, there's data on write sprrds at IR and elsewhere. No, that's what the buffer is for. What is critical is the read speed from the sensor.

This has been my typical songbird combination for 17 years now. The only difference is that now I can get better quality at ISO 1600 than I could shooting Velvia at ISO 40.
