The amount of data that would have to be collected to account for all light and angles should be staggering. I find it hard to believe it will all fit in the file size they are talking about. Could it simply be that the picture is taken with a large depth of field (all is in focus) and they then apply a gaussian blur throughout, which is selectively removed as you click on parts of the pictures? Would work if it is also coupled with distance information... Just a thought.
