Lightroom 4, PSE 11, and PSP X5 all support Topaz Labs plugins. Topaz also has a new app which allows their plugins to run as stand alones.

I would probably shoot around f/2.8 for a more forgiving DOF, and use a minimum of 1/250 with young children. I've had good luck with 50mm Nikon and 70mm Sigma primes.

With the D7000 you can either set the camera to take B&W pictures ahead of time or use the camera to convert them after the fact. Which tends to yield superior results? Also, if using a plug-in...

My advice is to remove the lens cap; Nikon cameras were never intended to be used with a lens cap in place. Seriously.
