1DMKII how much to the right?

For digital cameras, it's not always good practice to expose to the right. Expose to the right poses the overexposure problem.

I had a DRebel before, that camera blew out highlights like crazy. So I had to be very careful about using this technique.

My 1D (mk1) is wonderful, it has so much room to pull back the overexposed details (about 2 stops), I can now be more confident doing this expose-to-the-right thing.

So for your 1DMKII owners out there: is it better to expose to the right, or more important to avoid blowing the highlights? How much overexposed details can you pull back from a RAW file?
