Please look at the overexposure statistics and see exposing it even 1 stop hotter calls for a lot of touch-up to paint in the missing values.

Recovering neutrals in a converter is not a huge problem, as usually values are missing only in 1 channel - green. That is, half of pixels are still present. But for coloured highlights, like here, with +2EV a substantial area is missing also values in red, not the green only. That is hard to recover.

Now, would exposing the image at +2 EV really help?

Even with +2EV a lot of pixels are still more than 8 stops down below highlights. Technically, it is a dangerous zone.

If one believes he can use 10 stops, here is what happens:

As you can see, red channel is still extremely fragile, with 11% of pixels below 10 EV from saturation. Adams, with wide b/w film and manual processing, suggested that those should be plugged black.

With this type of subject the shooting involves HDR, colour filters (switch the WB display to "WB Coefficients" and see the red channel is underexposed more than 1 stop compared to green), and maybe setting the ISO to 200 or 400, where the shadow noise with many Canons is less intrusive.
