I have a book called "Photo School - A complete photographic course, with over 100 projects." by Michael Freeman. (Amphoto Books. American Photography Book Publishing").

It's really old. (First published in 1982). And probably meant as a text book for a photography course. I tried to find it on Amazon, but couldn't find it there.

But if you look on Amazon, you can find a bunch of . . . "Michael Freeman photo school . . ." books on a lot of topics.

Another book that I liked was "The Complete Kodak Book of Photography". No exercises, but tonnes and tonnes of ideas. And ways to think about it.
