As Joe was mentioning, once you've composed your shot, the frame and matting borders determine the presentation size regardless of the underlying print.

I spent a lot of time trying to match the photo I wanted to the frames I had available until I bought a $100 Logan mat cutter.  It lets me control the matting border widths so I can work around odd sizes and ratios.  It also gives me a lot of enjoyment.  To me, the final print is important and this lets me change them up frequently and fairly cheaply (it also makes Christmas gifts a lot easier).  If I'm not framing (as in canvas wrap or foamboard mounting) then dimensioning becomes more critical but I still need to crop to a certain extent.

I agree that understanding sensor ratios is good to know so you can minimize and manage cropping to get the most out of your photo but at the end of the day, you're going to likely crop anyway.
