Most likely a stupid question...D700

Recently bought a D700 and getting used to it but so far it seems to be a great camera.  I have been trying to get myself familiar with shutter controls, bulb settings and long exposures.  I have the MC-30... when I switch the camera to manual mode--> bulb I press the shutter cable or the shutter on the camera but it doesn't allow me to close the shutter again, it stays open for as long as it decides.... Any ideas?  I am so used to the D90 and just selecting the shutter mode and bulb, pressing the cable and then repressing when I want to close the shutter again.

Also when the shutter cable is attached I can't preview any images or access menus?

I have read the manual and browsed online and can't see anything.
