I missed your earlier thread, but will comment on the choices, nonetheless.

There are P&Ss that will shoot "professional" quality photos — especially small products and food (just be sure the cam has an x-sync port or a hot shoe).

In the interchangeable lens class of cameras, there are many cameras that perform as well as Canikon, for a fraction of the cost (and if you're going into business, you'd better consider costs, first and foremost). Pentax and Oly make products that are as useful as the big two's offerings, but which will save you a considerable amount of money (Pentax, especially, when it comes to top notch legacy glass).

As for lights, get as many as you can afford, along with soft boxes, scrims, reflectors, backdrops, black and white fome-cor, and a good stage on which to set up your shoots.

If it comes down to Canon or Nikon, I'd go with Nikon (but only because they seem to be a better ergonomic fit, for me).
