Different results with Auto and Av for same exposure settings?

I am a DSLR newbie. I just got a Pentax K50 and am learning how to use it.

I took two shots (within seconds of each other) of a lake on a sunny day. I first used Auto mode (the values were f/11, 1/200 shutter speed, and ISO-100). I then went to Av mode and set the aperture value to f/11; the camera now picked shutter speed of 1/160 and ISO-100.

When I compare the resulting photos (pasted below) they look very different. The first (Auto) photo has vibrant blues for the water and sky (in fact, the blues look a little too vibrant). The second photo looks more faded and the they blues are somewhat 'greyish.'

What is causing this difference? What other settings can I use to make the Av mode pictures less dull and more realistic? Or is there an altogether different approach / mode I should be using?
