Why do I need shorter shutter speeds for long focal lengths?

Richard already gave you the answer. Another way of saying the same thing is that the greater magnification of a longer FL magnifies the problem. If a star is an extremely small part of the image, the fact that it is oblong rather than round won't be seen as clearly.
