How soon will mirrorless track as good as, say, the D7100

No way you can use AF beam from your flash to do focus tracking, that's for single shot AF only.

Again, D7100 might be better, but I prefer to talk about the D7000 which is a camera I used extensively (55,000 shots).

D7000 AF is similar to D5300, D7100 is similar to D300, noir in the same class at all!
