I have a 70D, and just got access to a nice video tripod ($1,000+ Manfrotto rig that seems like it could hold an IMAX rig).

I am using the lowest compression mode on the camera, and have a (very) basic understanding of video (I don't see a lot I can change setting-wise for quality).  Using manual for everything, which means a deliberate, methodical setup for a shot.

I went out today, and shot some 'Baraka' or 'Planet Earth' style stuff.  Either static shots, or VERY slow pans (my god the tripod is nice!)

The quality of the static shots is very good when viewing on a quality display.  However, I am let down by the quality as soon as I start panning.  Everything just looks muddy, soft, and compressed.  Looks more like 480p than 1080p.

Am I doing something wrong (fine if I am), or is this the sort of quality I should expect from a consumer DSLR for video?

Picture is a screen grab at 100% size and the lowest compression .jpeg save possible.  Taken during a VERY slow pan (like 2 minutes to do a 360 degree turn slow):
