Help with shooting a dark subject with FZ150

I need some advice / help with taking decent photos of my black dog.  She frequently comes out looking super-saturated and un-detailed to the point where it looks like the photo is out of focus.  I've found that I can make the photos better in post-shot editing by playing with the shadows and contrast mainly.  I only edit in iPhoto so its not very high tech editing, I'd prefer not to do any post editing at all but I understand that that may be unavoidable.

I've attached two examples from this past weekend... I know the snow background may play a part but I get the same effect when its sunny out and she's on grass. Any suggestions?
