About the only thing a bad adapter can do is cause a very slight 'tilt' effect on the focus, sort of like a tilt/shift lens. And I mean slight. The shot will still be in focus, somewhere. An adapter cannot make the in-focus areas softer. It's just a tube.

I suspect the problem you are having is with manual focus technique. That technique is going to be different from camera-to-camera. The manual focus technique for a Nikon D7000 will be quite different than for a Fuji X mirrorless camera. I suspect your Rokinon 85mm shots aren't really softer on your Fuji as compared to your Nikon; I suspect they're simply not focused on the right spot.
