Isnt the problem that "matching film" with digital is more an image by image process rather than a set workflow?

If that's the case then I can definitely see the logic in shooting events on film given the amount of processing that could be involved with digital.

Yep.  That is a big part of it.  I have done hundreds of weddings with film playing the major part.  I would not like to play with software tools trying to get the look just right.  I had better things to do with my time!
