Simple. With RAW images, he uses post processing. With JPEG, the IQ parameters are bumbed up a lot. Secondly, his studio shots lighting are not within reach of the average camera user.

Nobody gets IQ like this without either PP or heavy in-camera processing. And studio lighting goes a long way toward image definition and refinement.

That's the trick camera makers use to make people want to tradin-in their perfectly working gear. A lot of people go by the saying "If only I had this kind of gear..."

Villebon

Post has something to do with it, but he understands and uses metering well. My guess is that he plays with metering modes quite a bit and uses spot metering frequently to good effect.
