Help Me Understand Back Button Focus

I've read the manuals and I've looked at the Canon tutorials and I still can't figure this out.

Say I've set my 6D and/or 7D up for back button focus.  If I am shooting single shot and I focus with the back button does the camera keep that focus until the next time that I focus with the back button?  Can I take my thumb off the back button if I am shooting in single shot?  If I am shooting in the multi shot mode I think I have to keep my thumb on the back button to keep the initial focus.  This is very confusing for an old guy.


It's very hard to teach an old dog new tricks.
