It'd be better if I could just lock and forget it, and not worry about any of the other buttons resetting it inappropriately.

Sounds like (M) Manual mode and maybe back-button focus to me.  Dial your aperture OR your shutter time while looking at the scene that has the exposure you want.  Then don't touch them.  As the subject moves around a bit, feel free to back-button to fix the focus, or just let the usual half-press focus adjust on every shot.
