Many polls have shown that the favored method of focusing with experienced photogs is focus and recompose, using the centre spot focus. It is much quicker than fiddling with focus points and ensures that you focus on what you want to. Before someone leaps in and talks about the theoretical inaccuracy of the technique, any focus errors fall well within normal DOF or AF accuracy

The only justification for using focus other than centre spot is for something like BIF where the subject is too difficult to focus on.

The obsession with multiple focus points, and moving the focus point around is a poor workaround in most cases

I guess you never lost a job because (using a fast lens at its widest aperture, hence extremely shallow DOF) you did center focus/recompose when at a result,  the eyes of the model went slightly out of focus which didn't remain unnoticed by your employer who enlarged the images to carefully examine if the eyes were in focus or not. To you doing central AF/recompose is a safe bet anything against which is merely a theoretical argument not a proven fact.
