E5 exposure meter in viewfinder and on screen

In using the manual mode on the E5 do you find that the meter indicating exposure works properly when you get the settings to zero or do you underexpose a bit for a better picture?

Maybe a better question would be how do those of you who are more professional use that meter?

I know that it is easier to correct an underexposed pic than an overexposed one but can you give someone like me that is trying to use the manual settings some pointers on that aspect?

I would much rather take a perfect looking picture with camera settings than have to go in a program and adjust.
