There are different kinds of interpolation...

Interpolation of spatial color information has to happen, that's not guessing. It's pretty much a fact- you just don't have the green/red spatial data there at 19.6 MP.

Interpolation is what you do to fill in gaps. There are no gaps between the pixels in any Foveon sensor, unlike a Bayer.

And there is a data gap- you don't have full color per photo site in spatial resolution so you do have to interpolate.  But it's certainly a different kind of interpolation, and the Foveon Quattro still has more data (barring noise issues, etc.).
