A difference between a 35mm sized sensor or a 35mm film camera...yes. A difference between an APS-C sized sensor... barely noticeable in the real world.

With a fast lens, it is still possible to limit DOF, if desired.

I think this was taken around F2 with a 50mm Minolta 1.4 in available light with a M43. My Canon APS-C wouldn't have limited the DOF much differently. My 35mm film cameras ...or an equivalent sized digital --would have.
