A7 - Not enough Depth Of Field - Any suggestions

I am using the SAL70300G lens with an LA-EA4 adapter. I am seeing issues where the image sharpness is lacking due to "more"  DOF...(I hope I am trying to explain it right ) is lacking for 70mm and above. This is my first FF camera so would like to know if this is the case or am I doing something technically incorrect?

Here is an example: The eyes of the bird are in focus (which I focused on) but look at the beak...its OOF. Note the aperture is f/8 which I thought ws enough to get the whole bird in focus. This is at 300mm.

Here is another where the eyes are in focus but the nose is barely...but it still looks OK not too bad. Note this is at f/5.6 but at 230mm:

Now I think an APS-C gives better DOF for the same aperture right? Say I shoot at f/8, I think anything beyond the min focusing distance, the APS-C will give most of the subject in focus...is that right to assume? Is it better to use APS-C for such purposes?
