Legacy Lenses and FX sensors?

Maybe an odd question, but can't find a discussion about this:

I'm an old Nikon F or F2 guy from the 70s and 80s, and I have a bunch of Pre AI primes (now converted to AI) that I use on my D7000.

I want to upgrade to an FX, with the Df, 610, and 800 as possible options. Since all of these are different sensors, is there any difference between them in terms of working best with the legacy lenses? I know auto focus and exposure are mute, but about color and other issues, is there any meaningful difference to consider?

Mostly I shoot macro, landscape, etc, very rarely shoot events or portraits.
