As you say I think this is give and take, as I understand it the Fuji has wheels but these wheels can't ever override the dials and are for narrowing down shutter speed and other options.

Personally my view is that if your "confused" by the shutter speed dial not being active when in aperture priority with the Df you probably don't need a camera like the Df. Its a situation easily avoided simply by shooting the camera in manual or shutter priority modes.
