Does the A7(r) kill HDR picture taking ?

Trust me on that; I spend my evenings developing Canon and Sony raws back-to-back.

The Alphas now bring the game to almost D800 levels of DR. That is a quantum level better than Canons best.

Wondering how these photographers use their Canon cameras?

He uses Canon 5D2 and 1Ds3 to shoot this DPR headline video and check his website for still photos.

I admit Canon files need more processing under certain light conditions. Nobody denies Sony sensors' advantages but it's also untrue you cannot take good photos with Canon cameras.
