Why don't mirrorless cameras work out optimum DoF?

Why don't mirrorless cameras work out optimum DoF?

With everything being digital on so many mirrorless cameras (focus, aperture, etc.), why aren't they able to work out the optimum depth of field to include (say) two subjects at different distances?

How hard could it be? Tap on the nearest subject, then on the furthest (on a touch screen) - and the camera should be able to work out the optimum aperture to keep both subjects in focus. I suspect some do this already with face detection...
