Aperture Blades...do they move when the shutter is released?

Do aperture blades move when I actually take a picture? I am just trying to get a full understanding of the mechanics and what goes on inside a camera. I currently own a Sony NEX 7 and I was under the impression that when I change the aperture the blades are moving real time and the only thing that moves when a picture is taken is the shutter(s). However I watched a video showing the aperture blades on a lens for a Canon DLSR and the slowmo vid seemed to show that when the shutter is released the aperture blades moving from a wide open position to the selected aperture. Does this vary from camera type to camera type?
