I suspect the "SLR" part above is being taken for granted without due thought on the part of the instructors. Given that lenses are not supposed to be changed at this first (just pre-digital) learning stage, why not consider an EXCELLENT Canon film rangefinder, the Canonet QL 17 or its siblings?

From the hotshoe down: focusing window for the range-finding focusing mechanism; focusing collar; aperture ring (with a "Tv" auto position); depth-of-field scale; shutter speed ring; metering sensor (next to the rim).

Of course, as with any vintage camera (and occasionally the odd modern one too), the trouble may be finding one in perfect working condition. Anyway, more info here and here and here and also a flickr gallery ("It's A Leica, It's A Tank, It's Canonet !!!").
