Do real pros really want retro controls?

I keep reading the control dials referred to as pro controls, but I would think real pros would prefer easy access configurable command dials.  I shoot a D800 and have it configured so that in Manual mode the aperture is controlled by the thumb dial and the shutter speed controlled by the front dial. In Aperture mode, aperture is controlled by the thumb dial and ISO by the front dial (Easy ISO). Exposure compensation is the thumb dial while pressing the AE button.  No need to remove the hand from the shooting position - all key controls are at your fingertips.

But I'm not a pro.  What do real pros think?
