Canon and Nikon dominate the photo world, but I don't understand why.

... I would look.  Every photograph is an abstraction, which is why some of them are interesting.

UV and infra-red images have their place - you must do a lot, being interested in how much more there is to reality, and all - but only because they change our view of our world.  I mean, I have never seen beetles lining up to get into exhibitions of UV photography.
