Don't know that EVFs are crap, but they aren't equal to good 100% Pentaprism OVF like the one on the D700 or D800 for all of the reasons you mentioned.  Also in low-light, EVFs when they gain up get quite grainy which makes low-light

The EVF on my Fujifilm X-E1 is useable, better than no VF,  but I don't frequently shoot fast action where VF blackout can be a huge problem. The OVF on my D800 is just a pleasure to shoot with, like Mozart compared to Britney Spears.  

Where we differ is I don't consider my D800 particularly heavy, something that I feel like I'm "lugging" it around.  But I don't use standard 24-70 f/2.8 zooms, which are the true source a lot of extra, often unnecessary extra weight.  A FF DSLR with a high grade f/2.8 zoom can get heavy, for sure.  But they also can cover about 80-90% of all general shooting, so it's not really such a big deal.

But if you have time to work, you could cover the 24-70 f/2.8 standard zoom focal lengths with lightweight primes.  I use the 28-50-85 f/1.8G and a 70-200 f4 VR, and I'm loving life. Excellent optics, totally manageable kit.  YMMV.
