Color space conversion mangling even in-gamut colors?

Does anyone have the problem where if you're converting from, say, aRGB to a narrow gamut, say, a CMYK printer's ICC profile for matte papers, whether by "proof colors" or actually converting the document to the printer's color profile for final adjustment before printing, the colors end up being way out of whack compared to before, even for colors that were shown to be in gamut?  In my case everything turns yellow and reds become oversaturated.  I even tried desaturating the image until all gamut-warning grey blinkies disappeared and still the colors changed when I converted, no matter which conversion engine or intent I chose.

Is this normal and how do you deal with it?  Now I finally know why all my prints end up with a significant color shift...
