This thread made me curious so I took another look at the Nikon product page and it looks like the Q button allows you to adjust Quality / ISO / White balance and it also looks like there are three user customizable slots. I haven't used the customizable My Settings yet - I am guessing that is what the U1, U2 and U3 will do? Is that right?

Not quite.

The U1-U3 positions on mode dial are used as user-defined shortcuts to some specific shooting settings that you either use frequently or that would otherwise require a lot of fiddling with buttons and dials to set each time (for example, specific settings for exposure, zoom position, flash output, ISO etc.).

The "My Settings" on the quick menu dial (now gone from P7800) on the other hand allows you quick access to a selection of up to 5 user-defined menu settings items that are otherwise buried somewhere in the menus and which are not available on the quick menu dial directly. My own selection for "My settings" for example includes shortcuts to Metering, Flash exposure compensation, ND filter on/off, NR and ADL settings).
